Recipe: Guilt and gluten free banana muffins

Today I decided spontaneously to bake some banana muffins.

Some of the ingredients

ingredients for 10-12 muffins

  • 280g gluten free flour
  • 2 tsp baking powder
  • 1 tsp xanthan gum
  • 1 tsp sea salt
  • 1 tsp ground cinnamon 
  • 110g coconut butter
  • 100g dark brown Muscovado sugar
  • 75g Demerara sugar
  • 140ml almond milk
  • 1 tsp vanilla extract
  • 3 ripe mashed bananas
  • muffin cases
Preheat the oven to 180°C or Gas Mark 4. 
Mix together the flour, baking powder, xanthan gum, salt and cinnamon. Then heat the coconut butter in a saucepan and let it cool down a little bit. Add the coconut butter to the mixture together with the sugar, almond milk and vanilla extract. Stir it well and then gently add the mashed bananas. 
You can then divide the mixture evenly between the muffin cases and bake in the oven for 18-20 minutes. Leave the muffins to cool for 20 minutes before enjoying them. 
Ready to enjoy!
