This is a very easy recipe for a delicious cake. The cake is without flour, hence gluten-free and has no dairy in it. George loves to bake at the moment and nearly every day we turn the kitchen into a big mess. Just kidding.
Ingredients for 8 pieces
- 3 medium sized apples
- 150g xylitol (natural sugar alternative)
- 200 g ground almonds
- 4 eggs
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 sachet vanilla sugar
Preheat the oven to 180°C or gas mark 4.
Peel the apples and cut them into small pieces. Mix the cinnamon and vanilla sugar with the apple pieces in a large bowl. Add all the other ingredients and mix until everything is blended. Pour the mixture into a round cake tin and bake for 45-60 minutes until the cake is risen and firm.
Turn the cake out on a wire rack to cool and dust with a little bit icing sugar if you like. Enjoy!
